The Chef’s Table is an intimate eight-course dining experience created exclusively for your group. Each menu is shaped by the season, featuring carefully selected ingredients, thoughtful pairings, and dishes designed to tell a story from the first course to the last.
Led by the same culinary vision that earned Ambrogio by Acquerello Michelin recognition, this experience brings a more intimate and personal expression of Italian dining to Ambrogio15 Pacific Beach.
Available Monday through Thursday, with reservations beginning between 5:00 and 7:30 PM. Only one Chef’s Table experience is hosted per evening, allowing our team to focus entirely on your table.
Regular, vegetarian, and vegan menus are available when requested in advance.
THE EXPERIENCE
Our Chef will prepare and personally serve you an 8-course tasting menu that will take you on a
gastronomic journey throughout the countries and cultures that shaped him during his career.

Our optional wine pairings follow the same philosophy developed for the tasting experiences at Ambrogio by Acquerello. Each wine is selected to complement the progression of the menu, highlighting Italian producers, distinctive regions, and pairings that bring another dimension to each course.

Emphasizing a dynamic harmony of flavors between the wine and menu, you
will experience this old but at the same time innovative approach to
winemaking through our unique and “foolish” minds. These wines capture the
essence of their terroir – both of the landscape, and of the people that inhabit it.

Through a visionary approach to wine pairing, our Chefs and Sommeliers will
transport you to Italy to discover rare treasures from the greatest winemakers and
vineyards of our country. In the search of the perfect balance of flavors, each wine is
chosen to complement and elevate the Chef’s culinary creations. Prepare yourself for some
of the most precious Italian wines, some of which may never be experienced again,
masterpieces we are honored to share with you.
